직화 바싹불고기 — The Dry-Grilled Bulgogi

The texture is the revelation for first-timers: the raw crab meat is soft, sweet and almost custard-like, and it slides out of the shell coated in that spicy-sweet sauce. Suck the meat straight from the legs, then scrape the sauce and any remaining meat onto your rice and mix. It’s messy, hands-on, and unforgettable — the single most addictive thing on the table, and the reason to save some rice for the end.
